I carefully trim the ham of all fat then pan sear until slightly crispy. I sprinkle the ham over a bed of fresh spinach and pear.
The salad is topped with a simple dressing of spicy mustard and balsamic vinegar. The spicy and sweet dressing brings the whole dish together and will have you craving more.

Ingredients:
leftover Christmas ham salad
½ cup chopped ham
3 cups fresh spinach
½ cup chopped green pear (approx. ½ a pear)
spicy balsamic dressing
¼ cup balsamic vinegar
1 T spicy mustard (I used horseradish brown for this one)
cracked black pepper to taste
Directions:
Trim your ham pieces of all extra fat and chop into bite-sized pieces.
Place the ham in a medium sized skillet over medium/high heat. Sear all sides of the ham until they turn slightly brown.
Chop the pear into bite-sized pieces.
Mix the pear, spinach, and ham together in a large bowl.
In a small bowl, whisk the vinegar, mustard, and pepper together.
Pour over salad, toss, and enjoy!
