F&F Greek Week continues with a knock-your-socks-off salad recipe.
I’m not one for foofy (word?) salads. I like hardy, filling, satisfying salads that don’t leave me scanning the fridge or break room for more food.
I do realize that traditional Greek Salads start off pretty healthy. My paleo version opts out of the usual feta cheese crumbles and sneaky non-paleo dressings.
{Be weary of salad dressings and remember to read labels. LOADS of them have hidden sugar and other strange ingredients.}
I made my dressing from scratch to ensure optimal flavor and nutrition. It’s tasty. You’ll like it.
I purchased organic chicken tenders and doubled the salad dressing so I could use half for a marinade.
Those little marinated, skewered, and grilled chickies were DEElicious; completely worth the minor extra effort.
The salad is a hardy mixture of chopped romaine lettuce, fresh bright San Marzano tomatoes (use whatever tomatoes you prefer), purple onion, cucumber, kalamata olives, and pepperoncini peppers.
Put it all together for a robust … (dare I say, manly?) … salad.
